Lamb Pittas

Here is another recipe i would like to share with you that i found in ASDA's Free Magazine. If you would like a copy of your own Magazine just pop to the nearest ASDA store near you. "This is our Lean- Meat version of the Classic Kebab, with Red Cabbage that makes for a tasty,more crunchy coleslaw".

Serves 4 people and Ready in 10 Minutes.

Ingredients

  • 2 x 310g pack ASDA Butcher's Selection Lamb, Leg Steaks, trimmed of Fat.
  • 2tsp Olive Oil.
  • 4 Asda Pitta Breads.
  • 150g Red Cabbage, shredded.
  • 100g Carrot, Coarsely, grated.
  • 3tbsp Asda Chosen by you Fat free Natural Greek Style Yogurt.
  • 1tsp Lemon Juice.
  • Handful of Rocket.

Method 

  • Brush the Lamb steaks on both sides with oil. Heat a griddle pan or dry frying pan and cook the lamb for 4-5 minutes on each side, turning occasionally. Slice diagonally.
  • Sprinkle the pittas with water and grill or griddle for 2-3 minutes. Cut open with a Knife.
  • Mix together the red cabbage and carrot. Mix the yogurt with the Lemon Juice.
  • Serve the Lamb and Salad in the pitta breads with the yogurt dressing and rocket.

Roast Pepper & Red Onion Stuffed Crust tortilla Pizza

"The Thin tortillas make a less stodgy base than bread".

Serves 4 people and Ready in 40 Minutes.

Ingredients

  • 3 Peppers, deseeded and sliced.
  • 2tbsp Olive Oil. 
  • 1 Large Red Onion, thinly sliced.
  • 1tbsp Balsamic Vinegar.
  • 1tsp Soft Brown Sugar.
  • 4 ASDA Chosen by you Large Tortilla Wraps.
  • 6tbsp ASDA Chosen by you Pizza Topper. 
  • 150g ASDA Soft Goat's Cheese, Crumbled.

Method 

  • Preheat the oven to 180C/160C Fan/Gas 4. Cook the peppers in 1tbsp of the oil in a frying pan for 8-10 minutes. Remove from the pan and set aside.
  • Heat the rest of the oil in the pan, add the onions and cook for 2-3 minutes. Add the Balsamic vinegar and sugar, and simmer for 5-6 minutes, stirring occasionally. Mix into peppers. 
  • Put the Tortillas on baking trays and brush the edges with water. Sprinkle half the crumbled cheese around the rims. Fold the edges over the cheese, and then pinch hard and pleat to make the folded edges.
  • Spread Pizza topper sauce in the middle of the tortilla's. Top with the vegetable mixture and the rest of the goats cheese. 
  • Cook the pizzas in the oven for 10 minutes, until the cheese has melted and the tortilla is golden.

Cornflake Chicken Nuggets with Spicy Potato Cubes

So here i am going to provide you with the recipe for Cornflake Chicken Nuggets with Spicy Potato Cubes.

"Cornflakes are a good store cupboard ingredient for coating meat and fish. Because these nuggets are baked, they're lower in fat than if battered and fried".

Serves 4 people and Ready in 50 Minutes. 

Ingredients

  • 500g potatoes, cut into cubes.
  • 1tbsp Olive Oil.
  • 1 Level tsp Asda Crushed Chillies (Optional).
  • 100g Asda Cornflakes, Crushed Lightly.
  • 50g Mature Cheddar, Grated.
  • 2 Level tbsp Plain Flour.
  • 450g pack Asda's Butcher's Selection Chicken Breast Fillets, cut into bite-size pieces.
  • 2 Medium Eggs
  • Beaten Leeks, Sweetcorn and Pea's, to Serve.

Method 

  • Preheat the Oven to 180C/ 160C Fan/Gas 4. Add the potatoes to a pan of boiling water, bring back to the boil, then simmer for 4-5 minutes. Drain, and toss in the oil and Chilli Flakes, if using. 
  • Spread on a baking tray and cook in the oven for 40-45 minutes, or until golden brown, shaking the tray halfway through. 
  • Meanwhile, mix the cornflakes and grated cheese together in a bowl. Put the flour in another bowl, add the chicken and toss to coat. Shake off any excess flour.
  • Dip the Chicken pieces in the beaten egg and then in the cornflake mixture to coat. Put on a lined baking tray and cook in the oven for the last 20-25 minutes with the potatoes, until the chicken is cooked and the coating is crunchy and golden brown.
  • Serve the chicken nuggets with the spicy potato cubes and vegetables.
